Produced only in occasion of very great vintages, this wine is dedicated, as its name implies, to Domenico Cabutto, founder of the company in 1920. Obtained from a careful selection of the best and more mature nebbiolo grapes, collected from the old vines of Vigna Sarmassa.

Produced only in occasion of very great vintages, this wine is dedicated, as its name implies, to Domenico Cabutto, founder of the company in 1920. Obtained from a careful selection of the best and more mature nebbiolo grapes, collected from the old vines of Vigna Sarmassa.

Denomination: DOCG (Checked and Guaranteed Origin Name).

Varietal: 100% nebbiolo.

Colour: an intense, elegantly transparent garnet red.

Aroma: The bouquet is full, complex and enveloping, with flowery aromas of dried roses and violets; fruity of raspberries and wild strawberries for the younger wines; of jam, marmalade and nutmeg, that with the passing of time are enriched with notes of black pepper, truffle, licorice, tobacco, leather, smoke and tar.

Flavour: With prominent softness, sapidity and tannins, this is a robust and austere wine, with notes of freshness still perceptible even after several years of ageing, which helps to guarantee a great longevity. Worthy of mention are also its balance, lingering taste and smell, and the marvellous harmony of its characteristics.

Vinification and ageing: following the ‘traditional’ idiosyncrasy of our reserve, we have created a Barolo that, albeit more robust and tannic, is still soft and gentle. Of a long maceration on the skins, the wine ages for at least 4 years in Slavonian oak barrels with a capacity of 15 hl, allowing the passing of time to refine its characteristics. Once the wine is put into bottles, it goes through an additional ageing period of at least 12 months.

Preferable with: red meats, roasted meat, game meat and cheeses of medium and long aged cheese.

Serving temperature: to enjoy the particularities of the wine, we recommend serving it at a temperature of 16/18 ºC in large wine goblets.
